Sweetpea Pantry offer range of ready to make and bake mixes that are gluten-free and dairy-free, with no added sugar and they are vegan friendly. There range includes everything from pizza dough to brownies and they are created to be both quick and easy as well as healthy and nutritious. We have been sent the Banana & Chocolate Chip Muffin Mix and the Buckwheat & Flax Pancake Mix to try.
Our first port of call was the pancakes, the boy loves a pancake for breakfast with loads of fresh fruit and as soon as saw the box arrive it was what he wanted to make. Not being able to wait for breakfast we got our pancake on straight after school one afternoon.
The instructions are clear and easy to follow, with the option of a thicker American style pancake or thinner crepe. We went American style. With the mix soon ready to go, we only added a couple of wet ingredients and stirred so it was super easy, I got the frying pan heated.
The pancakes came out brilliantly, I just wait to see the bubbles come through as the instructions stated and flipped, it worked every time. L was soon tucking into a plate of pancakes. We actually popped the leftovers in the fridge, even L couldn’t eat 8 in one sitting and popped them in the toaster to warm them through the next day and they reheated perfectly.
The pancakes had a wonderful flavour and texture so they get a big thumbs up!
A few days later it was onto the Banana and Chocolate Chip muffins, everyone had had a rough day so it felt like a muffin was in order.
Another easy one to mix up, with simple instructions and only a few wet ingredients needed. L enjoyed stirring the mix and spooning it into the cupcake cases.
20 minutes later and 6 fresh muffins were pulled out of the oven. Now these didn’t go as well as the pancakes sadly. They smelled divine and looked great but were just so dry. The instructions had said you could add a mashed banana for added moisture if you wanted, but not having a banana in the house and it only being optional I didn’t. I really wish I had and think it would have made all the difference.
As it was the muffins weren’t the treat we were hoping for, which is sad as they were just sweet enough and the banana pieces from the mix were delightfully tasty and had a slightly chewy texture that was very enjoyable. My advice with this mix is don’t take the fresh mashed banana as an optional extra but an integral part of the recipe.
I’m really pleased to have discovered this range, having a friend who is gluten free it has opened some new options for when they visit, I’ll definitely be checking out the pizza dough mix and we loved the pancakes so will be having them again, and again!
