Healthier Snacks Post Christmas

Well that’s it, we are solidly into 2020 and all the excesses of Christmas and New Year have me feeling like I might actually now be more cheese than human, with chocolate flowing through my veins and a good dose of mince pie in there somewhere too.

I’m not going on some massive health kick now it’s January, I just genuinely find myself craving something a little lighter, a bit more savoury and generally healthier when I find myself reaching for the snacks.

Pickled Walnut, Potato & Thyme Frittata – Recipe

When it comes to Christmas flavours Pickled Walnuts are a real classic, but other than enjoying them with cheese an biscuits what can you do with them? They’re actually rather versatile and I love the mix of flavours in this Pickled Walnut, Potato and Thyme Frittata.

It’s a lovely light meal and great for using up any leftover potatoes from the roast. Warm, nutty, festive and perfectly satisfying it’s the perfect meal to enjoy on Boxing Day after all the excesses of Christmas.

A Very Grown Up Rocky Road – Recipe

I don’t often create recipes for my blog, I love cooking and I’m very crafty but I’m just not creative that way. I am, however, very good at finding ways (excuses) to combine my love of chocolate with a good dose of booze and my favourite way to do that is with my Very Grown Up Rocky Road.

It’s such a simple concept, quick and easy to make, but it’s utterly delicious and a really indulgent treat that is strictly for grown ups.

Easy Lunch Box Fillers with Shaken Udder

I don’t have to pack a lunch for L yet, he gets free school meals because he’s still little. So when it came to sending him off to Barracudas Activity Day Camps over Easter I was thrown!

He needed enough for a full day, it needed to be tasty, filling and ok out of the fridge. Two snacks, at least, plus lunch. I dropped him off at 9am and didn’t have to pick him up until 4.30pm. That’s a lot of time and a lot of food. Not even taking into account all the running around they would be doing.
