When it comes to Christmas flavours Pickled Walnuts are a real classic, but other than enjoying them with cheese an biscuits what can you do with them? They’re actually rather versatile and I love the mix of flavours in this Pickled Walnut, Potato and Thyme Frittata.
It’s a lovely light meal and great for using up any leftover potatoes from the roast. Warm, nutty, festive and perfectly satisfying it’s the perfect meal to enjoy on Boxing Day after all the excesses of Christmas.
